Ethyl Maltol

Ethyl maltol is a food additive with a sweet odor that can be described as caramelized sugar or cooked fruit. It is a cost-effective flavor enhancer because it can significantly boost the original odor of food with only a tiny usage (usually 0.01-0.1%). Besides, it can also help to cover the odor of some highly concentrated meat products or seasonings.

A: Ethyl maltol cannot contact ironware and stainless steel, otherwise it will turn from white to red. Foodstuff containing ethyl maltol should also avoid contacting iron or metal.

A: As a food flavor enhancer, ethyl maltol has an obvious effect with only a tiny usage (usually 0.01-0.05%). Sometimes, only a few ppm will be effective. In practice, customers can dissolve ethyl maltol into hot water, ethyl alcohol or glycerol, then determine the optimal dosage through trial test. Ethyl maltol should not be added directly into food, otherwise it cannot dissolve thoroughly and will be less effective.
