AIPU FOOD’s caramel color, hydrolyzed vegetable protein compound powder/liquid (HVP Compound), soy sauce powder, disodium succinate and ethyl maltol can be applied to meat products as required.

 

* Caramel color in meat products
Caramel color is a water soluble and thermostable colorant. It can provide an appealing, appetizing and uniform color to meat products.

Generally speaking, caramel color cannot be used directly in raw meat. According to China’s national food safety standard, only plain caramel (E150a) can be applied in processed but uncooked meat. Meanwhile, US FDA only allows to use caramel color on the surface of raw meat.
However, caramel color (E150a, E150c, E150d) can be applied in various seasonings for meat, for example, marinades, spice blends and meat dips. Please check Seasonings for more information. 

 

 

* Hydrolyzed vegetable protein compound powder/liquid (HVP Compound) in meat products
AIPU FOOD’s R&D team has developed a variety of HVP Compound products from light neutral umami flavor to strong roasted meat flavor to satisfy different demands of customers. In meat products, HVP Compound cannot only improve the salty and umami taste, but also add a strong meaty note to enrich the original flavor of meat. AIPU FOOD’s HVP Compound can be used directly in processed meat or meat-flavored seasonings. Typical applications include beef jerky, sausages and roasted meat.

 

* Soy sauce powder in meat products
AIPU FOOD’s soy sauce powder provides meat products with a popular Asian flavor, which consists of salty, umami and fatty flavor. Soy sauce powder can also help reduce the dosage of salt without loss of tastes and textures. Typical applications include sausages, beef jerky and ham.

 

* Disodium succinate in meat products
AIPU FOOD’s disodium succinate is a thermostable flavor enhancer which can enhance the umami taste of meat products. According to China’s national food safety standard, GB 2760 Standard for Use of Food Additives, disodium succinate is permitted to be added in seasonings. * Ethyl maltol in meat products
According to China’s national food safety standard, GB 2760 Standard for Use of Food Additives, ethyl maltol is classified as food-grade synthetic flavor enhancer, which can enhance the overall flavor of meat products. It can be used in processed meat products including cured meat, cooked meat and casings.

Color Range: Golden - Dark brown.
Specification: Color intensity (Typical) 0.050 Absorbance of a 0.1% (w/v) solution of caramel in deionized water measured in a 1-cm cell at 610 nm wavelength.
Product Feature: Plain caramel, low sulfite.
Application: Widely used in sauces, semisolid compound seasonings, syrup, milk drink, brandy, whisky, rum, cookies, condiments, cocoa/chocolate and instant coffee because of its brilliant coloring properties.
